La Tenuta

Il Castello di Monte Vibiano sorge al centro della tenuta Fasola Bologna, 282 ettari sui Colli Perugini, un luogo magico situato su un terreno ricco di rocce sedimentarie e gesso.

Pionieri della sostenibilità, nel 2009 siamo stati la prima azienda agricola al mondo ad essere certificata a zero emissioni di C02 (UNI ISO 14064).

GOAT CHEESE, PEAR, FENNEL, OLIVE OIL

“We use this recipe at the restaurant with Hucqueliers fresh goat cheese from northern France” ⏤ Chef Alexandre Montois

Ingredients for 4 people:
- 200g fresh goat cheese
- 200g crème fraîche
- 5 gelatin sheets
- 1 pear
- 200ml pear juice
- 1 fennel head
- 2g agar
- 100g sugar
- 10g baking soda
- Dill
- Basil-infused olive oil
