“Vibianini in the kitchen” means cooking gourmet dishes in a few simple steps. Lorenzo welcomes chefs from all over Europe into his kitchen to cook their refined recipes together, which take on an exclusive flavour thanks to our Vibianini, concentrated in taste and quality.
This week`s recipe is a delicious dish prepared by chef Lola Marin from Damasqueros (Spain).
Silky almond, caviar and sardine.
This dish is inspired by the Andalusian tradition of pomegranate, combining the subtlety of the dried fruit with the marine depth of caviar and sardines.
INGREDIENTS for 4 people
1. For the silky almonds
500 g blanched almonds
200 g loaf bread
25 g garlic clove
100 g extra virgin olive oil
Salt to taste
2. For the sardines
200 g cleaned sardines
(fillets removed and previously frozen
according to current regulations)
100 g sherry vinegar
10 g lemon juice
3. For the brioche bread croutons
50 g brioche bread
20 g butter
4. To garnish
30 g grapes
20 g flaked almonds
100 g cooked beetroots
Riofrio caviar to taste
Flake salt to taste
PREPARATION
1. Prepare the cold silky sauce by mixing all the ingredients in a Thermomix. Set aside.
2. Clean the sardines, remove the fillets, and soak them in sherry vinegar for five minutes. Dry with paper, cut out in pieces and refrigerate. Reserve.
3. Cut the bread evenly and fry with butter.
COMPOSITION AND PLATING
Arrange the silky sauce on a serving plate. Place all the preparations on a presentation plate in the most aesthetically pleasing way possible.
VIBIANINO OIL PAIRING
The presentation of the dish can be finished with the Lemon Dressing, which pairs beautifully with the sardines.
