The Estate

The Castello di Monte Vibiano stands in the center of the Fasola Bologna estate, 282 hectares on the Hills of Perugia, a magical place located on a land rich in sedimentary rocks and gypsum.

Pioneers of sustainability, in 2009 we were the first farm in the world to be certified with zero CO2 emissions (UNI ISO 14064).

From the heart of Monte Vibiano comes Campo delle Api, a white wine that tells a story of land, time, and sustainability 🍇🐝

Born from one of our finest vineyards, where a beekeeping project protects biodiversity and symbolizes our deep respect for nature, this wine is made from one of the region’s most classic grapes. The grapes ferment for a few days with their skins, then complete their journey and maturation in steel, preserving purity and character.

In the glass, Campo delle Api reveals intense aromas of yellow fruit, Mediterranean berries, and delicate spices. On the palate, it is savory, complex, and beautifully structured — a truly gastronomic white wine.

Perfect at the table, it pairs effortlessly with white meats, hearty soups, cold cuts, and medium-aged cheeses. It especially loves chicken, rabbit, and rich game stews, including wild boar.

A wine that celebrates nature, tradition, and the pleasure of sharing.

GOAT CHEESE, PEAR, FENNEL, OLIVE OIL

Ingredients for 4 people:
- 200g fresh goat cheese
- 200g crème fraÎche
- 5 gelatin sheets
- 1 pear
- 200ml pear juice
- 1 fennel head
- 2g agar
- 100g sugar
- 10g baking soda
- Dill
