The grapes are destemmed and pressed in a delicate way. The alcoholic fermentation takes place in steel, with only indigenous yeasts; maturation in barriques and tonneaux.

Respectful of traditions as curious to investigate the potential of its terroir, the family that manages Monte Vibiano has always guarded the past with an eye to the future. The San Giovanni vineyard is the result of this vision and includes a multitude of varieties cultivated over time. A “complantation” that gives a dynamic red wine and son of the vintage.

Wine with intense aromas of morello cherry and berries, surrounded by sensations of licorice and spices. Captivating in flavors, it shows a fine but structured texture, of excellent substance and depth.

At ease with many dishes, from traditional ones to creative and international interpretations. San Giovanni loves strong flavors: first courses with meat and trufle sauces, soups, stews, grilled meat and aged cheeses.
