Vinification: maceration on the skins for about 24 hours; 3 weeks of low-temperature fermentation.
Ageing: 15 months in French wood barrel, then further 10 months in the bottle.

Organoleptic Characteristics: beautiful intense ancient gold color. At the nose incredible sensations of semi-mature pear and grapefruit enhanced by an intense citrus note that highlights salty nuances and aromatic herbs with an elegant touch of white pepper.
On the palate is voluminous, sapid and fresh with a persistent finish. Incredibly unique.
Food matching: perfect with smoked fish appetizers, but also with goose liver paté croutons. Exciting with grilled fish. A pure experience as a meditation wine.
