Prepare the asparagus. With a sharp knife, cut 2cm of the of the ends. Using a warm frying pan, add the butter, pan grattato and sage together with the asparagus add cook until golden colour.
Place on a plate starting with asparagus, the burrata, then drizzle the sage / pangrattato and shave the parmesan on top.
Finish with a grinding of black pepper and a 1 bottle of basil oil.
